You can update from 1.0.0.0 all the way to the latest. So yes.
BUT ... make sure you pay attention to any changes you have made to core files (which the upgrader will point out before upgrade) ... the upgrader will replace the files with the changes to the core and wipe out core changes ... so you have to understand your core changes and be able to code them again in the new version if your core changes are overwritten by new files in the upgrade. Not all files are replace in an upgrade ... only files that have upgrades.
