I think that addon will only take you as far as 1.0.9.5

Ah OK. I did not realise.

In that case "one by one" is the method I'd suggest. We made it as easy as possible by always creating update instructions & zip which takes hours every time, and they are posted publicly so that anyone can keep on top of versioning. My suggestion would be to update one version, then when you have more time, another version, and so on.

An alternative, which is sometimes viable and easier;
install a new shop and dump your existing DB of customers/orders/products and what not into it.
