They are not missing, they are not set in Phoenix Cart.
I *think* the settings for sending emails using SMTP are in the server's php.ini file.

What was the outcome of this one, as I would also be interested it might help avoid emails going to the customers spam / junk folder

PHP's mail() function only uses SMTP on Win32. If your are hosting on Linux, it uses Sendmail.
