Option B - because you have the "notify when instock" and also because you show which produces have options and which do not.

I don't use the stock vs no stock feature or attributes either but I think the second option is the better of the two.

The second option, I did wonder why you could block checkout for insufficient stock but it was still possible to add to cart. Just seemed odd to me.
