Help with the Catalog → Products Attributes setup

What is the "Catalog → Products Attributes" used for?
Is it for the prices of each of the options?
Or for each of the products in each of the options?
OR both?

Products being wedding stationery, eg. singles being invites, RSVPs, Order of Service, etc. Full sets being everything.

Any answers very much appreciated

Attributes:

Option and Attributes are variations of a product. EG, you might sell a Tshirt.
The product is the Tshirt.
The variations might be;
Colour [option]: Red, Blue, Green [attributes]
Size [option]: SM, MD, LG [attributes]
and so on.
