How to customize checkout emails

How can I customize the email that is sent to the customer and the one that the site owner receives when a new order is made? I need to have 2 different emails with 2 different subjects, etc
Currently the shop owner receives the same email as the customer and that can be a bit confusing and not that practical.
For example in the email to the shop owner I would like to add extra information like the telephone of the customer.

I am not too sure that you can have a different email sent to the store owner as standard as it just sends a copy of the email that the buyer gets.

You may be able to copy the extra order email code in the notifications and add new details and info in there but no idea how to achieve this, or even if it would work.

I don't think there are any addons available either, so it may be a custom job either by yourself or a certified developer.
