From admin go to Configuration → Customer Details to see this:
Phoenix has the information requested from customers shown on the create account page when they create an account set to true by default.
Change any settings to false to disable them from showing on the create account page as required.
- Click an item in the list to select it.
- Click Edit
- Click false to disable.
- Click Save
