From admin go to Configuration → Customer Details to see this:

This shows the information requested from customers when they create an account which is optional.

Change any settings to false to disable them from showing on the create account page as required. To change any setting:

• Click the item in the Title column list to select it.
• Click it again to edit.
• Change the settings in the edit panel.
• Click Save
