How many listings & sub listings can one have in the Categories / Products column.
If there is a limit where can that be altered?

Question is not specific enough to answer.
Categories and products are unlimited.
Listing of categories and products in store pages, displayed per page, is limited by configuring in Admin>Configuration>My Store>Maximum Values - Search Results

There is no limit as far as I am aware,, but as with most things, sites look better with properly structured categories that make finding items quick and easy. A big long list with hundreds of categories in it will put customers off as items are nor easy to find.

Thank you for the suggestions.
Tried changing Max values but to no avail.
If I add a new category then a sub category only the sub category will show a product.
This is the site I am working on https://slotcars.site/a-a-p-3108.html.
Example of problem is setup up at the top category A & sub AA, only AA will show a product.
Click on the A category then AA and you will see what I mean.

So you want products to be listed below categories, if a category contains both products and subcategories?
If that's correct, you will have to create a new module that shows products on index_nested - you could use the module from index_products as a starting point

If you look further down I have been doing it this way for other products but for some reason now it will not work.
as if there was a maximum number of categories that was stopping it from working.

Yes, categories can contain sub-categories or products but not both.
